IN THE HEART OF CHAMPAGNE COUNTRY JUST 1 1/2 HOURS FROM PARIS ! Le Domaine de la Courmaraille A GOOD LIFE FOR THE GEESE OR HOW TO MAKE GOOD FOIE GRAS.
| THE GOSLINGS
We raise our goslings in a warm, quiet place, visit them regularly and have nice little chats with them to make sure that all is well. The chicks need to express themselves, and they have an opinion on everything. Most importantly, we make sure that they always have plenty of food (mostly grains) and water. |
THE YOUNGTERS
When the goslings are 3 weeks old, we start taking them on field trips with themes like: Let’s Visit the Countryside All About Pond Life Little Walks on Tiny Legs (not too strenuous!) Practicing our Navigation Skills (it’s easy to get lost on a 7 hectare farm when you’re only 20 cm tall !)
| THE ADULTS
Next comes the big adventure. The goose, now an adult, struts around, swims, and stuffs itself on succulent grass, mint, and other wild herbs. They are free to roam wherever they like, and their daily routine is punctuated only by visitors and the return to the coop in the evening. Resting in nice, clean straw gives them independence, good humor, a joie de vivre and, most of all, flavour ! |
THE GORGING
The next step involves gorging the geese. They are fed a diet consisting only of corn, which Fred has grown himself in this marvelous farm in the Seine valley, far from the hustle and bustle of Paris.
